Quick, easy, and healthy is the way to go when temperatures are soaring and there is fun in the sun to be had. Our Maurer Foundation Board Member, Joan Leondis, has a mustard roasted salmon recipe that will get you out of the kitchen fast with a meal everyone will be sure to love.

Mustard Roasted Salmon

Ingredients

  • 1 1/2 lbs. wild salmon
  • 1/4 cup olive oil
  • 1 teaspoon mustard
  • 1 teaspoon soy sauce
  • 1 teaspoon grated ginger

Directions

  • Preheat oven to 350 degrees Fahrenheit
  • Place salmon in baking dish
  • Mix remaining ingredients and spread on top of salmon
  • Season with black pepper
  • Bake for 25-30 mins
